Enjoying the delights of ice cream has been known for ages. Ice cream is considered the oldest dessert in the world and in many countries it is the most popular dessert.

The history of ice cream is based on different stories but two of them are still the most common.

According to the first, the history of ice cream goes back as far as to 3000 years BC when the Chinese people knew the recipe, which is considered a forerunner of today's ice cream. First prepared in the form of ice beverage made from fruit juices and snow, and later with milk. This ice dessert so impressed Marco Polo, who was returning from the Far East to Italy, that he spread the use of ice cream on the Italian courts.

Another story is related to ancient Rome and the Emperor Nero. He had in fact devised a way how to feast himself during the summer heat on something fruity and refreshing. Historians claim that he sent his slaves into the mountains to bring snow, which the cooks would then  sweeten especially for him with honey or fruit juices.

During the 17th century ice cream spread through Europe and it has become a luxury product designed for the royal courts. With the development of refrigeration industry in the late 19th century ice cream production has experienced a great expansion.

The tradition of enjoying the ice cream has been maintained till today. It is known that the first ice cream in the area of Dubrovnik was prepared right there in the café Dubravka.
